About Me & My Website

My name is Maggie and I've been on the internet's frugal food scene for over a decade. Lots of things have changed in that time including my family's dietary needs. When I started cooking I was content to cook enough to fill up all the empty places, but the more I learn the more I understand that the quality of my family's diet is just as important as the quantity. Over the past few years I've made significant changes in our diet. In return I've been rewarded with a healthier, happier family.

My cooking experience comes from a lifetime in the trenches of practical low-cost cooking. My sister and I were the children of a single working mom. We received foodstamps and, when we were lucky, boxes of food from either the church or local food banks. These resources made the difference between going to bed hungry or with a half-decent meal in our bellies. When I first left home I was dirt poor as many young people find themselves when starting out in the world. After I married I had 2 step daughters and a hungry, hard working husband to cook for. Eventually Fred and I had 2 sons of our own. One way or the other there has always been a houseful of hungry mouths to feed and limited funds upon which to do it. This website is a result of my efforts.

When I first shared recipes online I was content to share the inexpensive, good tasting, country fare that my family consumed on a regular basis. A decade later I'm facing dietary treatement of several conditions, including my husband's diabetes, my polycysitic ovarian syndrome (PCOS for short), and two sons on the autism spectrum: one with severe ADHD and the other with Asperger's Syndrome.  While facing these diverse needs I find myself juggling a food budget that seems tighter than it was when I started online back before the turn of the last century.

Fred and I follow the same diet since the Dietary recommendations for Diabetes and PCOS are roughly similar. Fred keeps a close check on his blood sugar levels and we eat mostly whole foods including whole grains, fresh and frozen fruits and veggies, legumes and fish. Fred also includes lean meats, as does our youngest son.

The boys are following a diet recommend by many experts, one that eliminates both gluten and casein. Gluten is a protein found in wheat, rye, and barley. Casein is a protein found in milk, cheese and other dairy products. When we realized this was the direction our diet was headed I was faced with a dilemma. If we can't eat pasta, bread, muffins, biscuits, saltine crackers, cheese, yogurt or drink our family favorite instant nonfat dry milk, then what would we eat instead?

This is where the trial and error came in. At first I made a lot of mistakes, some of them unfortunately expensive. I'm still working things out but with time I have become more  adept at juggling our various dietary needs along with our itty bitty food budget. I can honestly say that we are eating better than we have in years and everyone feels healthier and stronger, especially Fred and I. Not having to worry so much about our children's behavior helps too.
