Basic Vanilla Frosting

  • 3 tablespoons margarine or butter flavored shortening, melted or very soft

  • 2 tablespoons soymilk
  • 1/2 teaspoon vanilla
  • Dash salt
  • 1-1/2 cups powdered sugar

Melt the margarine or shortening in a small saucepan over low heat. Pour it into a medium-sized mixing bowl. Add the milk, vanilla and salt. Mix briefly. Add the powdered sugar. Use a fork or whisk to beat the frosting smooth. On rainy days you may need to add an extra tablespoon or two of powdered sugar to get the right spreading consistency. Makes enough to frost an 8 or 9-inch cake.
