Homemade Complete Buttermilk Pancake Mix

  • 4 cups unbleached or all-purpose flour

  • 4 cups whole wheat flour or buckwheat flour or some of each
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon salt
  • 2 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 cup dry whole eggs or 1/2 cup powdered egg whites or 1/3-cup Ener-G egg replacer
  • 1 cup dry buttermilk powder
  • 1-1/2 cups instant nonfat dry milk powder
  • 1 cup vegetable shortening

Measure all of the ingredients except the shortening into a large bowl. Make sure your hands are clean and dry. Mix the dry ingredients with your hands until everything is evenly distributed. Add the shortening. Use your hands to mash everything together until it's dry and crumbly. Transfer the mixture to a clean resealable container. Makes about 13-cups.

TO PREPARE

  • 1-1/2 cups homemade pancake mix

  • 1 cup fresh water
  • Fat for frying

In a medium bowl combine the pancake mix and water. Blend with a fork until well mixed. A few lumps will remain, that's okay.

Heat the oil in a skillet over a medium flame. Drop the pancake batter into the skillet. Cook until tiny bubbles appear on the pancake surface. Flip and brown the remaining side. Continue until all the pancakes are cooked, adding more oil to the skillet as necessary to prevent sticking. Makes about 10 small pancakes.

Plain Complete Pancake Mix
Prepare Buttermilk Pancake Mix as directed with the following changes: Omit the baking soda. Increase the the baking powder to 3-tablespoons. Omit the dry buttermilk powder. Increase the instant nonfat dry milk powder to 3 cups. Everything else remains the same. Prepare as directed.

Either of these recipes can be used instead of store-bought Complete Pancake Mix in almost any recipe. When you make your own you get a much higher quality product and you know exactly what goes into it. Store-bought pancake mix is convenient but less nutritious and produces inferior quality pancakes.
