Old Fashioned Gingerbread

  • 1 cup unsulfured molasses or 1/2 cup EACH honey and molasses

  • 1/2 cup hot water
  • 1/2 cup butter 
  • 1/4 teaspoon salt
  • 1-1/2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1-3/4 cups whole wheat flour

My favorite recipe for gingerbread, this one has become a holiday tradition for us that I hope the kids will continue when they have households of their own.  The method is easy enough. In a large bowl combine the molasses (& honey), water, butter and salt. Mix smooth. Sprinkle the ginger, baking soda and whole wheat flour over the batter and mix again, beating until smooth. Turn the batter into a 9 by 13-inch pan that has been coated with non-stick spray. Bake at 350° for 35 minutes. The top will be golden brown and if poke a fork down into the cake it will come out clean.

I like this best when it's completely cooled and even chilled in the fridge or on a cool back porch in the winter. My kids like it warm from the oven. Both methods of service work fine. If you like your gingerbread frosted use a cream cheese frosting or a simple vanilla glaze. Rum sauce or Hard Sauce are both good over the gingerbread if you serve it hot from the oven.
