In a large bowl beat together the honey, butter, egg, buttermilk and vanilla. Mix until emulsified and smooth. Add the salt, flour and baking soda. Beat well. Turn the batter into a well oiled 9-inch round pan. Bake at 350° for 25 minutes. Remove from oven and cool before serving. This may be frosted if desired. It is the equivalent of a Plain Yellow Cake. This recipe is easily doubled for a layer cake, or if you want enough batter to bake it in a 9 by 13-inch pan. Makes 12 servings. Per Serving (excluding unknown items): 144 Calories; 5g Fat (26.9% calories from fat); 2g Protein; 25g Carbohydrate; 1g Dietary Fiber; 28mg Cholesterol; 154mg Sodium.
