One-Egg Honey Cake

  • 3/4 cup honey

  • 1/4 cup melted butter
  • 1 egg
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 cup whole wheat flour (sifted)
  • 1/2 teaspoon baking soda

In a large bowl beat together the honey, butter, egg, buttermilk and vanilla.  Mix until emulsified and smooth.  Add the salt, flour and baking soda.  Beat well.  Turn the batter into a well oiled 9-inch round pan.  Bake at 350° for 25 minutes.  Remove from oven and cool before serving.  This may be frosted if desired.  It is the equivalent of a Plain Yellow Cake.  This recipe is easily doubled for a layer cake, or if you want enough batter to bake it in a 9 by 13-inch pan. 

Makes 12 servings.
