These are fast, easy and delicious. Start out with a can of salmon. Open it and pour all of the contents into a medium-sized bowl. All of your household cats will come out of the woodwork and sing to you in gracious meows. Put them all outside. Wash your hands. Look over the salmon in the bowl. There will be skin and bones. The skin has omega-3 fatty acids and is good for you. The bones have calcium and are good for you too. Resolve to leave them both in the patties and steel your heart if necessary. Measure the dry milk powder, potato flakes, onion powder, sugar, and peppers into the bowl of salmon. Add 1/4-cup water. Dig into the mixture with your hands. As come across small bones crush them between your thumb and forefinger. They dissolve quite readily. If the mixture seems dry then add more water as needed. It depends on how much liquid was packed with the salmon which can vary by quite a bit. As you mix shred the chunks of salmon with your hands, continuing until you have a nice cohesive mixture that sticks together with a little packing. Squeeze some in your hand to make sure it does. Wash your hands again. Heat 2-tablespoons of any kind of fat in a large skillet. Shape the salmon mixture into patties and fry in the hot skillet. When they are well browned on the bottom, flip and brown the remaining side. Continue until all of the patties are well browned. I usually get bout 8 patties from this recipe. Serve the Salmon Patties with coleslaw, butter-bread and mashed sweet potatoes or seasoned rice.
