Sweetened Dairy Cream

  • 8 ounce can Table Cream or Media Cream

  • 1/4 cup brown sugar
  • 1 or 2 packets True Lemon (optional)

Table Cream is usually found in the ethnic section of the market with the Mexican foods. The most common brand name is Nestle.

Briskly shake the unopened can of cream. This makes it smooth. Open up the cream. Scrape it into a cereal bowl. Stir in the brown sugar and if desired a pinch of salt. Mix well. Let the cream sit for about 10 minutes and mix again. Letting the cream sit with the sugar in it gives the sugar time to “melt” into the cream so it dissolves more fully.

You can serve the cream as is over canned fruit or cake or use instead of whipped topping over fruit desserts. If you prefer a more piquant sauce then stir 1 or 2 packets of True Lemon, lemon crystals into the cream. It will thicken up and make a few lumps. Use a small whisk or a fork and a hearty helping of determination to make the cream smooth. The lemon can be added before or after the sugar, as you like.

This topping is quick and easy and has a rich dairy goodness that tastes especially good when you're eating a steady diet of storage food.
