Two Tomato Salads

Easy Tomato Salad

  • 15 ounce can no-salt-added-tomatoes

  • Any of the Following--Balsamic vinegar, cider vinegar, olive oil, celery seed or celery salt, True Lemon, basil, dried onion, onion powder, onion salt, garlic powder, garlic salt, black pepper or sugar

Begin by draining the tomatoes until they are quite dry. The juice that drains off can be added to soups, bean dishes, or drunk as tomato juice. Now season the tomatoes according to your preference. I like balsamic vinegar and basil together, or lemon and celery seed, or cider vinegar, garlic, onion and olive oil. I also like them plain with a dash of salt and sprinkle of sugar. You can season the tomatoes for everyone in a big bowl, or let each person season their own serving individually. This makes 3 servings. This is a refreshing and tasty dish, easy on the cook and enjoyed by the eaters.

 

Red & White Salad

  • 15 ounce can no-salt-added tomatoes, well drained

  • 8 ounce can water chestnuts, well drained and rinsed if possible
  • 1 packet True Lemon
  • 1/4 teaspoon sugar
  • Pinch celery salt

Open the tomatoes and drain off all of the juice. Actually squeeze them dry if need be. Place them in a small serving bowl. Open up the water chestnuts and if possible rinse them to remove the flavor of the can. Chop the water chestnuts if necessary. Place them in the bowl with the tomatoes. Add the lemon, sugar and celery salt. Mix well. If you have the time allow the salad to sit for 20 or 30 minutes giving the flavors a chance to blend. Makes 4 servings.

This salad is crunchy, juicy and refreshing. If you're fond of onion add 1-teaspoon of dry onion along with everything else. The flavor is light, clean and summery. Feel free to alter the seasonings to suit your palette. This recipe is a great one for fighting food fatigue.
